Arctic Vortex Snowflake Cookies

"Baby, it's cold outside..."
That's really true today, 1/6/2014, because the wind chills are between -50 and -60 degrees below Fahrenheit.  Twenty-three states in the 48 contingent states are under wind chill warnings, so what's a gal to do?  The kids have no school due to the cold weather, so since we can't beat the chill, we'll 'join' 'em and make "Arctic Vortex Snowflake Cookies"  - an ode to the weather and it helps warm up the house!  Win-win situation :-)

Sugar Cookies with Butter Cream Frosting

Pillsbury Sugar Cookie Mix, following directions on box for rolling out cookie dough, plus adding 1/2 tsp. cream of tartar and 1 tsp. vanilla extract per batch.

Butter Cream Frosting

1/2 cup hot water
1 cup shortening (Crisco)
2 lbs. powdered sugar
1 to 2 Tblsp. meringue powder (optional)
1 tsp. each of butter flavoring, almond flavoring, and vanilla flavorings
a pinch of white popcorn sale (super fine)

Mix all ingredients together very well (at least five minutes), until smooth and creamy.  Cutter cream icing can be made without meringue powder, but it helps stabilize and give icing more volume.

This icing is ready to ice a cake and/or do the decorating.  If you need roses, add some powdered sugar and mix in to create a stiff frosting.  If you would like to ice your cake, add a little hot water (1 tsp. at a time), until you achieve the correct consistency.
